Plans for the CSA bounty

Getting all those great looking vegetables  yesterday inspired me start planning to use them up.  To start with I’ll:

  • use the bok choi in my morning smoothie
  • have plenty of salads this week
  • make some Szechwan green beans
  • plan to have some balsamic beets and beet greens
  • have some stir-fried kale with carrots and pecans

I’ll only be around until Tuesday and will have to plan to use the root veggies the following week once I’m back (sweet potato soup and then apple rutabaga casserole, yum!).  We will keep the menu pretty simple while I’m gone so Pat doesn’t have to do too much cooking AND cleaning up while taking care of everything else too.
